Since it's freezing outside, here's a soup to warm you up.
Vegetable Soup with Turkey Meatballs (feeds 2 or 3)
1 lb of ground turkey (you can use beef but I like the softer texture of the turkey for meatballs)
1 14.5 oz can of diced tomatoes- undrained
1 14.5 oz can beef broth
1/2 cup water
1/4 cup Stove Top Stuffing (that's what I had in my cabinet), or italian bread crumbs, or crushed croutons
1/2 of 1 lb bag of frozen mixed vegetables- mine had okra, beans, corn, potatoes,peas, carrots, etc...
Combine tomatoes, broth and water in large saucepan and bring to a boil then simmer for a few minutes. While that is simmering, combine ground meat with crumbs of your choice then roll into 1" balls. I get about 35. Drop them into the pan and bring to a boil. Reduce heat and cover. Let simmer until the meat is firm (about 160 degrees) and veggies are to desired softness. For extra yumminess, add shredded cheese on top.
